01 / OUR STORY
Heritage is the flavour of time.POLLVAR’s story begins in the Cognac region of France. In 1883, the Pollvar Richard family owned its own vineyard here. The brand takes its name from its founder, Pollvar Richard.
In 1893, the family expanded its winegrowing activity, with vineyards in Grande and Petite Champagne, in Saint-Même-les-Carrières, between Jarnac and Châteauneuf-sur-Charente.
Distillation skills handed down through generations, and patience with oak and time, lie at the heart of POLLVAR.

02 / TERROIR
To understand cognac, begin with the land.
On both banks of the Charente, six crus shape Cognac’s flavour landscape.
Continental and oceanic influences meet here. Chalk, clay, flint and sandy soils give rise to distinct aromas and ageing characteristics.
Grande Champagne
Known for its chalky soils, Grande Champagne produces delicate, light eaux-de-vie with floral aromas, which need long ageing in oak casks to reveal their character.
The brochure describes POLLVAR’s Légende 30 Years and 50 Years as selections of Grande Champagne cognac.03 / THE CRAFT
Grapes, copper, oak and time. From Ugni Blanc grapes to eau-de-vie, from copper stills to oak casks, cognac develops its character through traditional craft and patient ageing.
01The Charentais Method
Two successive distillations take place in a copper pot still. The distiller carefully selects the heart of the spirit, preserving the aromatic compounds that shape cognac’s flavour.
02Wood Selection, Cooperage and Toasting
The grain, porosity and toasting of oak influence how the spirit evolves. Traditional cooperage allows wood and eau-de-vie to interact slowly over time.
03Colour and Aromas in Harmony
Gentle contact with air in oak casks gradually brings amber colour and aromatic depth. The natural evaporation is poetically known as the angels’ share.
